This exceptional coffee hails from the renowned Guadalupe Zaju Coffee Estate in Chiapas, Mexico, and is a shining example of an anaerobically natural processed coffee.
A Taste of Excellence
This coffee boasts an elegant, fruit-forward taste profile with delightful notes of brown sugar, black tea, and yellow fruit. Its unique flavour is a testament to the meticulous care and sustainable practices at Teddy Esteve’s Guadalupe Zaju Coffee Estate. Spanning 140 hectares at altitudes of 900-1300 masl, the estate cultivates rust-resistant hybrids: Centroamericano, Marsellesa, and Mundo Maya.
Sustainable and Innovative Practices
Guadalupe Zaju, a renowned coffee farm in Chiapas, Mexico, has a long-standing commitment to both community well-being and environmental sustainability. Established over a century ago, the farm has consistently employed low-impact coffee farming techniques to preserve local vegetation and biodiversity. Their coffee beans are shade-grown, a method that not only enhances the quality of the coffee but also supports the surrounding ecosystem by maintaining natural habitats for wildlife.
In addition to their environmental efforts, Guadalupe Zaju places a strong emphasis on supporting local communities Guadalupe Zaju collaborates with Fundación C.A.F.E. to support education in local agricultural communities. They provide access to quality education for children and adults, offer vocational training, and promote literacy.
What is Anaerobic Processing?
Anaerobic processing is a unique method of fermenting coffee cherries in an oxygen-free environment. This process involves placing the cherries in sealed tanks where they undergo fermentation without exposure to air. The lack of oxygen allows for the development of distinct and complex flavours, resulting in a more pronounced and vibrant taste profile. This method requires careful monitoring and control to ensure the desired flavour characteristics are achieved, making it a testament to the skill and expertise of the coffee producers.
Versatile Omni Roast
Our Mexico Immersion Customer Favourite is an omni roasted coffee, meaning it is carefully roasted to be enjoyed in espresso as well as filter brew methods. We Recommend serving as Espresso, Cold Brew and hot or iced batch brew.
