Bitton.X – A new collaborative site with Bitton and FX.

Focusing more on an express, minimal offering while pumping out the coffees through the side service window.

Located within One Global Resorts in Green Square, Zetland the site services commuters using the train station, locals living in nearby high rises and the hotel guests in Skye Suits above us.

We talk to Head Barista, Franci from Bitton.X about her journey & all things coffee.


Tell us a little bit about you?

I started as kitchen a hand in a café patisserie in Sydney’s CBD 5 years ago when I moved from Brazil to Australia. In this role I became interested in the coffee industry through watching baristas on site make me coffee, drinking their coffee and picking up on some skills. They taught me my core skills which carried me to where I am today.

My next role was as a barista in a high-volume café located further up the road in the city. Here I experienced a whole new side of the coffee industry as I was part of a team pouring up to 20kg’s worth of coffee a day!

When Covid shut down the CBD I looked elsewhere for employment and found Bitton, where I worked some weekend shifts to get by. After a month I ended up full time here where I have been ever since.

 

Tell us, how do you drink your coffee?

Almond Cap with honey – always.

 

What are your tips to make better coffee?

First thing I cannot harp on about enough – if it’s busy DO NOT STRESS. Continue working through the line at a reasonable pace without compromising coffee quality.

 

What new trends or changes have you seen coming from your customers or the industry?

The biggest thing I have noticed in the last 6 months is that customers are moving away from the usual coffee beverage and dipping their toes into the world of spiced drinks like Chai, Sticky Chai as well as Matcha – its HUGE now.

 

Can you tell us about your relationship with Grinder’s Coffee?

Bitton is currently the oldest running coffee partner with Grinders Coffee. My boss David is incredibly happy with the ongoing support and coffee quality for the last almost 25 years!

For me, the consistency of the product is exceptional.

 

What makes Bitton a great place to work?

Firstly, I live local which is always a win. Most importantly to me however is the team. We support each other, we laugh together, and we even spend time together outside of work hours.
