We talk to Dawn, the newest member of the Cockles Café team & their head barista.
Tell us a little bit about you?
I started out helping a friend in their café and realised I really enjoyed making coffee, and here I am 14 years later, still making coffee & loving it.
What are your tips to make better coffee?
As soon as you put the portafilter into the group head in the machine, make sure to press to start the water immediately, this helps avoid burning the coffee grind.
What new trends or changes have you seen coming from your customers or the industry?
I’ve noticed more and more customers are requesting alternative milks and even decaf.
Can you tell us about your relationship with Grinder’s Coffee?
Excellent service and a great quality product. Grinders support the café and staff with training and maintenance whenever we need it.
