Located under the Coca-Cola head office in North Sydney, Deux is a bustling Café servicing both internal and external customers. With a focus of traditional café style foods for grab and go while also leaning into Indonesian style laksa, beef and rice dishes.
We talk to Head Barista of Deux Cafe about all thing’s coffee!
Tell us a little bit about you?
I started my hospitality career as a young 18-year-old working in KFC, in Sydney’s infamous Town Hall. This is where I discovered a passion for hospitality – I loved the fast-paced environment, and impeccable customer service.
I’ve worked at a number of establishments, from many cafes and restaurants, from quick service to bakeries, to a local Sydney roaster. Building my love for coffee.
With a commitment to serving great coffee, I pride myself on my latte art, and eye to detail for coffee extraction and dosing to serve the perfect coffee.
Tell us, how do you drink your coffee?
I love to switch it up! I usually start with a Long Black in the early morning, followed by a strong almond latte around 10am and finish off my day with an espresso kick.
What are your tips to make better coffee?
Always taste your own coffee! How can you know if you make a good coffee if you aren’t drinking it?
Have a good basic understanding of coffee recipes, extraction times and dosing. Consistency is king to serving the perfect cup of coffee!
What new trends or changes have you seen coming from your customers or the industry?
I’ve noticed more repeat coffee’s later in the afternoon.
Batch Brew made with single origin also seems to be on the rise. We love Grinders Single Origin program.
Can you tell us about your relationship with Grinder’s Coffee?
Honestly. My partner and I have been pleasantly surprised with the over and above support Grinders has shown since partnering. We operate multiple café site’s using different coffee suppliers and have noticed the attention to detail and over and above support with marketing and operations on a day to day.
What makes Deux Cafe a great place to work?
We are located in the heart of North Sydney, quiet often serving celebrities from nearby radio stations. My staff always come in with a smile on their face and we try share the energy with our customers.
