A local gem, adored by the locals. This family run café was awarded the best café in Whittlesea last year and it’s easy to see why! Known for yummy breakfast and delicious cakes, Olivia’s Café was described by explore Whittlesea as a “a cosy and relaxed setting, that will make you feel like you are visiting a friend”.
This month, we talk to Carly, long term hospitality stalwart and now Head Barista at Olivia’s and what she loves about coffee and how she learns and grows as a barista.
My go to first thing is a double ristretto latte and a piccolo in the afternoon.
It’s always evolving and you’re always learning. I love the training side of it, helping the team to make the best, consistent coffee. You don’t want customers coming in to request a particular barista, they should all be the same.
Get your shots right. Focus on dialing in the grinder and getting consistency. Getting the milk right, not making it too hot and practice lots!
Customers are becoming more educated about coffee, asking a lot more questions and becoming more particular and clearer about what they want. Like more specific about milk temperatures. Also watching closely what we’re doing, why do you time and weigh.
We’re using the classic blend at the moment. I think it’s a great all rounder both in espresso and milk. I’ve got a soft spot for Alec, (our trainer) he has been a really great support. He answers any questions we have for him and is always willing to help out!
I don’t think I can go past the Spanish eggs. They’re kind of sweet and spicy but a good hearty breakfast.
